Application of Enzymes

Enzymes are valuable natural tools in bakery processes, but their effectiveness depends on key factors: the presence of the right substrate, sufficient moisture, proper temperature, and enough time for the reaction. These ideal conditions are commonly found in breadmaking, which is why enzyme applications are most advanced in this area.

In bread, enzymes like amylase, pentosanase, protease, lipoxygenase, and glucose oxidase improve dough handling, gas retention, crumb softness, and shelf life. Fungal and bacterial amylases break down starch into sugars for yeast fermentation and control staling. Pentosanase (xylanase) softens dough by breaking down water-binding pentosans, increasing volume and stability. Proteases can be used to modify gluten strength or enhance bread aroma, while lipoxygenase and glucose oxidase support dough bleaching and oxidation processes.

In contrast, the use of enzymes in pastry, biscuits, and waffles is more limited due to lower moisture content, cooler temperatures, and shorter processing times. In these products, enzymes like proteases and pentosanases are mainly used to improve dough extensibility and processability. Proteases break down gluten networks, making dough more workable. However, they act gradually and require precise control, especially in low moisture doughs. Pentosanases reduce dough stiffening caused by water-binding fibers, particularly in rye based recipes like crispbread.

While enzymes offer great potential as clean label alternatives to chemical additives, especially in bread, their role in other baked goods is still evolving. Continued research and careful formulation are key to unlocking their full benefits across the entire bakery range.
